This hyperstylish, sleek eatery is The Breakers hotel's homage to young and hip. The hotel runs the restaurant even though it's off premises, and it's worth leaving the comfy, upper-crust confines of The Breakers for this resounding Echo. The menu is broken down into categories: earth, wind, fire, water, and flavor, which doesn't do the food any real justice. Sushi bar specialties such as the hamachi kama, grilled hamachi, Asian greens and citrus soy, and the outstanding echo roll with shrimp tempura, cucumber, avocado, and tobiko in a sesame soy sheet with super-spicy sriacha sauce are two of my favorites. But it's not all sushi. There are Chinese dim sum specialties, too. The dim sum sampler at $26 feeds two and is an ideal starter or full-blown meal. Then there's the Thai roast duck, and the open-flame wok specialties. There's too much to choose from, but it's all good. Be sure to check out the restaurant's Dragonfly Lounge after dinner. It's a hopping scene, especially by Palm Beach standards.
