Agua ReviewSleek and minimalist, at the turn of the millennium Agua was a pioneer in fashionable dining among Santiago's well-to-do, who clambered for reservations in what was then the place to see and be seen. Aqua still bustles with beautiful people, and although its founding chef has since moved on, the restaurant remains at the apex of culinary innovation and creativity, with a menu that focuses on top Chilean products such as Magellanic lamb, king crab, shellfish, tuna from Easter Island, and more. The current chef, by the way, is a former apprentice of Thomas Keller's Per Se. Foodies will delight in Agua's four fixed-price lunch menus, which change daily and include three courses for $15 (£7.50), not including wine or beverages. A sample menu could include a choice between smoked salmon salad, beef filet with herbs and squash risotto, and a lucuma mousse (a natural fruit that tastes like butterscotch).
