Given his Swiss upbringing, it's no wonder chef Carlos Meyer is a perfectionist when it comes to technique and choosing quality ingredients -- which is why Europeo is consistently rated by critics as the best restaurant in Santiago. As the name implies, Europeo specializes in European-influenced cuisine, although chef Meyer has expanded his global range by adding a dab of Asia here and there to liven things up. You'll find dishes such as foie gras, steak tartare on rye, or a "strudel" of lobster and spinach on vanilla-infused bisque, and in between each course the waitstaff will serve a refreshing litchi and ginger sorbet as a complimentary palate cleanser. The dining area is polished and sophisticated, yet its compact size and individual hanging lamps create warmth. Within the same building is Europeo's La Brasserie, with cheaper prices and lighter, bistro-style meals that nevertheless do not compromise the outstanding quality this restaurant is known for. There is patio seating, too.
