Along with Europeo and Astrid y Gastón, this cosmopolitan restaurant is for those who do not want to risk being served cuisine that is anything short of fabulous. Puerto Fuy is for the upscale food lover who isn't afraid of high prices or newfangled cooking techniques based on innovation and molecular science. Sea urchin foam anyone? Mint caviar? Nitrogen-frozen mango sorbet? More timid eaters will savor luxurious dishes such as foie gras with poached pears, fresh salmon with vodka and black caviar, and abalone ravioli with champagne cream. Even the most simple dishes are presented as a work of art by an attentive, gracious waitstaff. The restaurant's smart ambience draws both the suit-and-tie and designer jeans crowd.
