Alain Lacoste arguably serves the best cassoulet in Toulouse, and also lures with his foie gras, white beans in pork fat, red sausage, white sausage, and, of course, goose confit. His duck foie gras comes with figs and, of all things, gingerbread. Calves' sweetbreads are delectable with morels, and scallops are served in the provençale style. Nearly all locals order the cassoulet; it's slow cooked to perfection. The restaurant itself is a simple stone and brick dining room. All of this fat can be cut with the acidity of strawberry soup with lime sorbet. If not that, then opt for the apple tart.
