This is the most elegant oasis in Toulouse, and the owners have won several prestigious awards for transforming this 17th-century convent into a sophisticated hotel. The public rooms contain early-19th-century antiques and Napoleonic-inspired tenting over the bars. Some of the spacious and stylish guest rooms have urn-shaped balustrades overlooking formal squares, and all have high ceilings and modern amenities. The beds are elegantly fitted in tasteful fabrics, with soft pillows, most richly refurbished in the early millennium. Each well-maintained tiled bathroom has a tub/shower combination. The hotel restaurants, Toulousy-Les Jardins de l'Opéra and La Brasserie de l'Opéra, are two classic venues for French cuisine.
