This might mean local hake prepared with Spanish herbs, or curry-infused veal medallions, with shitake mushrooms and sage cream. You’ll want to loosen that belt for desert: vacherin (nougat ice-cream) with whipped cream and orange flower, perhaps? Or if it’s on the menu, try the Cazette tart drizzled in hazelnut nectar (Cazette is the term for coarsely-cut, roasted Burgundian hazelnuts—a real local delicacy not generally found outside the region). Delish!
