Situated on the 4th floor of the city’s chamber of commerce building, the Jean-Pierre Wilmotte designed dining room has a wall of windows looking out onto the city and Loire River. Chef Jean-Yves Guého took his knives around the world before returning to his native Brittany, and earning a Michelin star. His travels have influenced his innovative menu, which may include lobster glazed with spicy tomato tartare, lime and ginger, roasted squab with hibiscus-candied rhubarb or apricot, rosemary and honey soufflé. These are best enjoyed with some muscadet or anjou from the excellent cellar stocked mostly with Loire Valley wines.
