The panoramic view rivals the amazing culinary creativity at the best restaurant in Nantes. Situated on the 4th floor of the city’s chamber of commerce building, the Jean-Pierre Wilmotte designed dining room has a wall of windows looking out onto the city and Loire River. Chef Jean-Yves Guého took his knives around the world before returning to his native Brittany. His travels have influenced his innovative menu, which may include ravioli of merlan and Thai basil served in a lemongrass broth, sea bass with truffles and sunchoke puree, or ginger-glazed veal sweetbreads with braised Brussels sprouts. These are best enjoyed with some muscadet or anjou from the excellent cellar stocked mostly with Loire Valley wines. Vegetarian and vegan menus are also available on request.
