When Sarah Gavigan, a music business transplant from Los Angeles, moved to Nashville, she craved the authentic ramen she’d come to know there, so she started experimenting in her kitchen. Soon she was going through hundreds of pounds of pork bones from Porter Road Butcher as she chased down the perfect broth. She achieved it and then some in what is certainly the best ramen shop in Nashville and, I would argue, in the state. The menu changes seasonally, but there is always some iteration of the spicy miso ramen, which you should order—salty, earthy, and meaty—an unequaled umami bomb. Add a soy egg; it’s worth the $2 upcharge. Small plates not to be missed include the hot chicken buns with spicy fried chicken, dill pickle, and slaw made with Kewpie brand Japanese mayo. Sit at the small bar in the back for the coziest feel, and pair your hot ramen with cool craft cocktails or a draft Sapporo. Be prepared for a short wait if you go during peak hours. If you want to skip that, order online or pick up from her East Nashville pick-up-only outpost, Pop To Go (604 Gallatin Ave., Ste. #203).
