The indisputable OG of hot chicken, Prince’s is a pilgrimage all serious eaters must make. The shop is decidedly simple and remains in a dicey part of town, but the no-frills ambience is all part of it. The expertly balanced spice mix yields a flavor that is spicy, salty, and deep. Medium heat will be spicy for most, and you must order the perfectly seasoned fries as an accompaniment to soak up some of that spice and grease. The fact that ranch costs $1 extra underscores their subtle point: This chicken doesn’t need it. Prince’s has a second location on Nolensville Pike near Brentwood (5814 Nolensville Pike, #110) and a roving food truck if you don’t want to trek to the original location (their Facebook page www.facebook.com/pg/PrincesHotChicken sometimes provides the truck’s location).
