The indisputable OG of hot chicken, Prince’s is a pilgrimage all serious eaters must make. The shop is decidedly simple and remains in a dicey part of town, but the no-frills ambience is all part of it. The expertly balanced spice mix yields a flavor that is spicy, salty, and deep. Medium heat will be spicy for most, and you must order the perfectly seasoned fries as an accompaniment to soak up some of that spice and grease. The fact that ranch costs $1 extra underscores their subtle point: This chicken doesn’t need it. 

Prince’s has other locations, including one in Fifth + Broadway, but frankly I don’t think they hold up. While their original Ewing Dr. location is no longer in operation, I think you need to make a pilgrimage to their new Nolensville Pike flagship if you’re a purist. It’s the only way you’ll have a chance at catching prioprietor André Prince Jeffries—who actually orders her hot chicken mild.
