Black Umbrian truffles top many of the house made pastas, most notably umbrichelli al tartufo, tossed with egg yolk and parmigiano. The house signature dish (palomba, Italian for wild dove) is roasted in a memorably delicious sauce of capers, rosemary, olives, and a hint of anchovies.
