The big excitement these days at SOBO—the name is a contraction of “sophisticated bohemian”—is their new cookbook, which means you can now make their Killer Fish Tacos at home. But it’s so much better to let chef Lisa Ahier make them in her shiny new restaurant in downtown Tofino. She’s come a long way since she started dishing up polenta fries in a purple food truck in the Tofino Botanical Gardens back in 2003. Even then, her food made headlines—[“]Saveur” magazine called it “perhaps the most exciting lunch stand in North America.” Now things are a lot more “SO” than “BO.” For one thing, she can serve alcohol with her food, and SOBO does make a fabulous margarita. And she can serve it in a room that is sleek, modern, and airy, with big windows letting in the view of Clayoquot Sound. But the food is still terrific and just bohemian enough: Left Coast seafood stew, for instance, braised duck ramen, or the terrific wood-fired pizzas. A must on any visit to Tofino.
