And no wonder it’s expanding: This is some ridiculously good food. Try a tempura-battered ling cod taco, or a burrito stuffed with slow-cooked pork, washed down with an icy lime-mint slush, and your taste buds will have died and gone to heaven. Look for the bright orange truck painted with an image of the Virgin de Guadalupe holding a taco at the back of the Live to Surf parking lot. You can’t miss it, and you won’t want to.
