The bathrooms at this restaurant contain the coolest toilets in Paris. Water cascades into the tank from through a long, glass tube, making each flush an event. That might seem like a strange way to start a restaurant review, but it's indicative of the imaginativeness that’s goes into every aspect of the dining experience at this young restaurant. The silverware looks like something the painter Gustave Klimt might have invented, and the food combinations read like impossibilities on the menu, but meld into new flavor profiles unlike any I’d ever tasted before. On my last visit to this two-story townhouse restaurant, these included a splendid smoked eel tart, made even richer by a layer of pistachio cream; a starter of mozzarella and melon taken to another level by the addition of kalamata olives; and, on the more traditional side, perfectly cooked beef bathed in the most flavorsome bernaise sauce I’ve ever tasted. Also unusual: the kindliness of the waitstaff here, who seem genuinely invested in making sure each diner has a meal to remember. A wonderful new addition to the Paris dining scene!
