Ordering a “Peka” Dish
Food cooked under a peka, or cooking bell, is usually ordered 24 hrs. ahead of time. The peka is covered with hot ashes while underneath it the meat (normally lamb, or sometimes octopus) bakes with potatoes and vegetables. Complete cooking usually takes several hours. The results are tender and lovely.
