Originally a rather formal fine-dining restaurant, Marcelo has evolved into a more casual venue with an exposed kitchen, though it still is a tasting menu only type of place. Well-heeled pilgrims often reserve ahead as a reward for finishing their treks. The food shows a distinct Japanese influence, especially in the beautiful presentation and use of bright colors to make the plates pop. Peru sneaks into some of the dishes as well, often by way of ceviche. Diners gather around a central communal table. Even in the slower seasons, the waitlist tends to run at least two weeks, so reserve well ahead.
