Consistent with its role as a hardworking, industry-conscious border town, Schaffhausen doesn't place too much emphasis on folklore, so the handful of kitschy souvenirs you're likely to find will probably be sold from small shops around the railway station, or from nondescript outlets beside either of the town's main shopping streets, Vordergasse and Fronwegplatz.
