Cooking in Tarragona is rather Janus-like, looking out to the sea for all the bounty of the Mediterranean and glancing over its shoulder to the mountainous country that begins a short distance from the coast. Its menus brim with coastal fish (sea bream, bass) and deep-water predators (yellowfin tuna), while the local lamb and kid are as good as any in Spain. They come from herds that feed on the rosemary scrub of nearby hillsides. Those same herds also provide excellent local sheep and goat’s milk cheeses.
