Hacienda del Cardenal
You’ll be charmed when you make your way through the ancient city walls and find yourself in the tranquil gardens of the former summer residence of one lucky archbishop. The building, dating from the 18th century, has the slightly faded feel of one of the older paradors, with worn terracotta tiles and antique lounges, but its rooms are recently renovated and very comfortable. Some have terraces with sun loungers and rates are remarkably low given the privileged setting. Dinner in the spacious dining room (or garden, weather permitting) is at the more expensive end of the scale. The menu is traditional, including cochinillo (suckling pig) and Toledo’s trademark perdiz roja estofada (roast red partridge), which stays long in the mouth and the memory. The hotel is located at the bottom of the hill near the Bisagra Gate, but it is close to the escalator at Paseo de Recaredo.
