Parador de Trujillo

Set in the former Franciscan convent of Santa Clara, founded in 1533, Trujillo’s parador has a hint of saintly austerity. Its nuns’ cells were transformed into a state-run hotel in 1984 and now feature luxurious canopied beds and mosaic-tiled bathrooms. There’s a tranquil Renaissance cloister, a small swimming pool, and a restaurant serving regional specialties including zorongollo, a red pepper salad with pickled quail, and técula mécula, an almond and egg tart. The parador is a short walk from Plaza Mayor, but its quiet location makes it feel a little removed from the comings and goings of the square.
