Named for a French dessert, this is one of the best restaurants outside the walls, tendering a polished performance from greeting to check. Within minutes after the doors are opened at lunchtime, a happy noise ensues, drowning out the cellphone users. Dinner is quieter, with jazz on the sound system and honey-amber lighting. A fashionable crowd comes in wearing everything from bespoke suits to designer jeans. A comely waitstaff dressed in black conveys as much warmth as the rushed process permits. The menu doesn't change much, so pay attention to the daily specials, which are more likely to demonstrate the kitchen's creativity. Wapiti with raspberry sauce and spiced pear was a recent highlight, as was roasted salmon with tomatoes and balsamic vinaigrette. Find the entrance on rue de la Chevrotière. There are outdoor tables, and valet parking is available after 6pm.
