Old Québec meets new in one of the most romantic boutique hotels in the city. The owners stripped the inside of the 1912 Dominion Fish & Fruit building down to the studs and pipes and started over, keeping the angular lines and adding soft touches. If you require a rock-hard mattress, look elsewhere; these Québec-made beds are deep, soft, and enveloping, heaped with linen-covered pillows and covered with feather duvets. (Like them enough and you can buy them from the Dominion's online boutique.) Custom-made bedside tables swing into place or out of the way; room tones are gray-green and champagne-white; black-and-white photos of architectural details provide subtle decor. Even the least expensive rooms are large, and modem outlets are at handy desktop level. About a third of the rooms have only showers, while the rest include tubs. Room no. 206 is a dandy, with a shower that shares a glass wall with the bedroom, and views of the city's centuries-old former-industrial buildings. A hearty continental breakfast is set out near the fireplace in the handsome lobby along with morning newspapers, and you can relax at a large group table, in linen-covered easy chairs, or on the terrace in back. A basement fitness room has been added.
