Cave Spring Cellars
If you’re only going to make it to one winery, make it Cave Spring. The landscape is pure Niagara: a gorgeously sloping vineyard that abuts the dense canopy of the Niagara escarpment. There’s a little something for everyone at this 30-plus-year-old winery. History buffs will appreciate seeing Ontario’s oldest wine cellar; those who crave pampering can head to the spa; and foodies will be delighted by the locavore-approved plates coming out of the kitchen at the Inn On The Twenty Restaurant, while true oenophiles will be wooed by the wines. Located in the Beamsville Bench microclimate, Cave Spring's vines are nourished by mineral-rich soils (fed by limestone, shale, and sandstone) that yield award-winning wines. Fans of excellent Riesling, Chardonnay, Pinot Noir, and Cabernet Franc will not be disappointed.
