If the difficulty-level of getting the reservation is an indication of quality—and we'd argue it is in Tokyo—then this sushi counter is the best in the city. Ever since well-respected sushi master Takaaki Sugita moved his restaurant to tradition looking, but new digs in Nihonbashi, this has become the seat to get (there are only 9 in the entire restaurant). The fish glistens and glides down the tongue, and each dish is plated like a painting. Eating here will be a highlight of your trip....if you can get in.
