This restaurant's greenhouse-style architecture makes the most of the area's spectacular scenery, with large windows for inside diners plus an outdoor patio. The menu changes seasonally and emphasizes fresh local ingredients and herbs from the inn's garden whenever possible. Breakfast features homemade granola, fresh fruits and juices, and various egg dishes, including trout and eggs and wonderful omelets such as smoked salmon and brie. Dinner selections vary by season but could include grilled, blackened sushi-quality tuna with avocado, mango, and cilantro salsa; pork loin with a chipotle chile plum sauce; local red trout, or Utah lamb. There is an excellent wine cellar, microbrewed draft beers, and complete liquor service.
